Ingredients (Serves 4–6)

  • 1 medium head of cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 3–4 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: 1–2 cups cooked protein (chicken, sausage, or beans)

Instructions

  1. Sauté Aromatics:
    • In a large pot, heat 1–2 tbsp oil over medium heat.
    • Sauté onion, carrots, and celery for 3–4 minutes until slightly softened.
    • Add garlic and cook 30 seconds more.
  2. Add Cabbage and Broth:
    • Stir in chopped cabbage, diced tomatoes, broth, thyme, paprika, bay leaf, salt, and pepper.
  3. Simmer:
    • Bring to a boil, then reduce heat and simmer for 25–30 minutes, until cabbage is tender.
  4. Add Protein (Optional):
    • Stir in cooked chicken, sausage, or beans if using, and simmer 5 more minutes to heat through.
  5. Serve:
    • Remove bay leaf, taste, and adjust seasoning.
    • Serve hot with crusty bread or a sprinkle of fresh herbs.
