Here’s a hearty and healthy recipe for Cabbage Soup—light, flavorful, and perfect as a meal or starter.


Classic Cabbage Soup

Ingredients

  • 1 small head green cabbage, chopped (about 6 cups)
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • 1–2 tbsp olive oil
  • Optional: 1 bay leaf, chopped parsley for garnish

Instructions

  1. Sauté aromatics:
    • In a large pot, heat olive oil over medium heat.
    • Add onions, carrots, and celery. Sauté 5 minutes until slightly softened.
    • Add garlic and cook 1 minute.
  2. Add liquids and cabbage:
    • Stir in diced tomatoes (with juice) and broth.
    • Add chopped cabbage, thyme, paprika, and bay leaf if using.
  3. Simmer:
    • Bring soup to a boil, then reduce heat to low.
    • Cover and simmer 25–30 minutes, until vegetables are tender.
  4. Season and serve:
    • Taste and adjust salt and pepper.
    • Remove bay leaf, garnish with fresh parsley if desired.
    • Serve hot with crusty bread.

💡 Tips:

  • For a hearty version, add diced potatoes, beans, or cooked sausage.
  • For lighter, low-calorie soup, skip oil and use more broth.
  • Soup stores well in the fridge for 3–4 days and tastes even better the next day as flavors meld.
