Carrot & parsnip soup

Lovely choice 🥕🥔—sweet, earthy, and super comforting.
Here’s a simple, velvety Carrot & Parsnip Soup that’s easy and cozy.

Carrot & Parsnip Soup (serves 4)

Ingredients

  • 2 tbsp olive oil or butter
  • 1 onion, chopped
  • 3 carrots, peeled & sliced
  • 2 parsnips, peeled & sliced
  • 1 clove garlic, minced
  • 1 tsp ground cumin (optional but great)
  • 750 ml / 3 cups vegetable or chicken stock
  • Salt & black pepper
  • Optional finish: cream, yogurt, or coconut milk

Instructions

  1. Heat oil/butter in a pot over medium heat.
  2. Add onion and cook until soft (5 minutes).
  3. Add garlic, carrots, parsnips, and cumin. Stir 1 minute.
  4. Pour in stock, bring to a boil, then simmer 20–25 minutes until veg is very tender.
  5. Blend until smooth. Season to taste.
  6. Finish with a swirl of cream or coconut milk if you like.

Nice Extras

  • Ginger for warmth
  • Honey or maple for extra sweetness
  • Chili flakes for a little kick
  • Crusty bread for dunking (mandatory, honestly)
