Here’s a smooth, comforting Carrot Soup—naturally sweet, cozy, and easy to make 🥕🍲


Creamy Carrot Soup

Ingredients (serves 4)

  • 2 tbsp butter or olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1½ lbs carrots, peeled & sliced
  • 3–4 cups vegetable or chicken broth
  • ½ cup cream, half-and-half, or coconut milk
  • Salt & black pepper, to taste

Optional flavor add-ins:

  • ½ tsp ginger or curry powder
  • Pinch of nutmeg
  • Fresh thyme or parsley

Instructions

  1. Sauté aromatics
    • Heat butter or oil in a pot over medium heat.
    • Cook onion 4–5 minutes until soft.
    • Add garlic; cook 30 seconds.
  2. Cook carrots
    • Add carrots and broth (enough to just cover).
    • Bring to a boil, then simmer 20–25 minutes until carrots are very tender.
  3. Blend
    • Use an immersion blender or blend in batches until smooth.
  4. Finish
    • Stir in cream.
    • Season with salt, pepper, and optional spices.
  5. Serve
    • Garnish with cream swirl, herbs, or croutons.

Variations

  • Ginger Carrot Soup: Add fresh grated ginger
  • Carrot Coconut Curry: Use coconut milk + curry powder
  • Roasted Carrot Soup: Roast carrots first for deeper flavor
  • Vegan: Use olive oil + coconut milk

  • Topped with toasted seeds or crispy onions
