Classic Cheesecake

Ingredients (8–9 inch springform pan)

Crust (optional, but recommended):

  • 1½ cups graham cracker crumbs
  • ¼ cup sugar
  • 6 tbsp butter, melted

Filling:

  • 16 oz (2 blocks) cream cheese, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or heavy cream

Instructions

1. Prep

  • Preheat oven to 325°F (165°C).
  • Grease the springform pan.
  • For crust: mix graham cracker crumbs, sugar, and butter; press into bottom of pan.

2. Make filling

  1. Beat cream cheese until smooth.
  2. Add sugar, mix well.
  3. Add eggs one at a time, mixing gently.
  4. Stir in vanilla and sour cream (or cream).

3. Bake

  • Pour filling over crust.
  • Bake 40–45 minutes until edges are set and center slightly jiggles.
  • Optional: use a water bath for extra smooth texture.

4. Cool

  • Cool at room temperature 30 minutes.
  • Refrigerate 2–4 hours or overnight before slicing.

Tips

  • Use room-temperature cream cheese to avoid lumps.
  • Avoid overmixing eggs → prevents cracks.
  • Chill fully for clean slices.
