🧄 Cheesy Garlic Muffin Bites (12–16 bites)

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp garlic powder (or 1 clove garlic, minced)
  • 1 cup shredded cheddar cheese (or mix of cheddar + mozzarella)
  • 1 cup milk
  • 1 large egg
  • 3 tbsp melted butter or olive oil
  • Optional: 2 tbsp chopped fresh parsley or chives

Instructions

  1. Preheat oven:
    • 375°F (190°C). Grease or line a mini muffin pan.
  2. Mix dry ingredients:
    • In a bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.
    • Stir in shredded cheese (and optional herbs).
  3. Mix wet ingredients:
    • In another bowl, whisk milk, egg, and melted butter.
  4. Combine:
    • Pour wet ingredients into dry ingredients and gently stir until just combined.
    • Do not overmix; the batter should be slightly lumpy.
  5. Fill muffin pan:
    • Spoon batter into prepared mini muffin cups, about ¾ full.
  6. Bake:
    • 15–18 minutes, or until tops are golden and a toothpick comes out clean.
  7. Serve warm:
    • Best served warm with soups, salads, or as a snack.

🔄 Variations

  • Spicy: Add ¼ tsp cayenne or finely chopped jalapeños.
  • Herby: Add rosemary, thyme, or Italian seasoning.
  • Cheese mix: Use a combination of sharp cheddar, Parmesan, and mozzarella for extra flavor.
  • Garlic butter glaze: Brush warm muffins with melted butter and minced garlic after baking for extra garlicky flavor.

💡 Tips

  • Use freshly shredded cheese for better melting.
  • Mini muffin pans give perfect bite-sized pieces; standard muffin pans work too (bake 20–25 min).
  • Let cool slightly before removing from pan to prevent sticking.
