Cherry Cheesecake Bars

Ingredients

Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter, melted

Cheesecake Layer

  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract

Topping

  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat oven to 325°F (165°C)
    Line a 9×13-inch pan with parchment or lightly grease.
  2. Make crust
    • Mix crumbs, sugar, and butter
    • Press firmly into pan
    • Bake 10 minutes, then cool slightly
  3. Make filling
    • Beat cream cheese and sugar until smooth
    • Add eggs one at a time
    • Mix in vanilla
  4. Assemble
    • Pour cheesecake mixture over crust
    • Spoon cherry pie filling evenly on top
  5. Bake
    • Bake 35–40 minutes until set with a slight jiggle in center
  6. Cool
    • Cool completely, then refrigerate 3–4 hours before slicing

Tips & Variations

  • Extra rich: add ½ cup sour cream to filling
  • Chocolate crust: use chocolate graham crackers or Oreos
  • Swirled top: gently swirl cherries into batter before baking
  • Other toppings: blueberry, strawberry, or apple pie filling
