Ingredients
- 2 tbsp butter
- 1 small onion, chopped
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- Salt & pepper
Dumplings
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- ¾ cup milk
- 2 tbsp melted butter
Directions
- Melt butter in a large pot. Add onion and cook until soft.
- Add chicken broth and chicken. Bring to a gentle boil.
- Mix dumpling ingredients until just combined.
- Drop spoonfuls of dough into simmering broth.
- Cover and cook 15 minutes without lifting the lid.
- Season to taste and gently stir.
Quick notes
- Fluffy dumplings: keep the lid on
- Creamy: add ½ cup milk or cream at the end
- Fast version: use biscuit dough pieces instead of homemade dumplings
