chicken and dumplings

Got it 🙂 Here’s a classic, simple chicken and dumplings version—straight comfort food.

Ingredients

  • 2 tbsp butter
  • 1 small onion, chopped
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • Salt & pepper

Dumplings

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup milk
  • 2 tbsp melted butter

Directions

  1. Melt butter in a large pot. Add onion and cook until soft.
  2. Add chicken broth and chicken. Bring to a gentle boil.
  3. Mix dumpling ingredients until just combined.
  4. Drop spoonfuls of dough into simmering broth.
  5. Cover and cook 15 minutes without lifting the lid.
  6. Season to taste and gently stir.

Quick notes

  • Fluffy dumplings: keep the lid on
  • Creamy: add ½ cup milk or cream at the end
  • Fast version: use biscuit dough pieces instead of homemade dumplings
