Here’s a rich and flavorful Chicken in Creamy Sun-Dried Tomato Sauce recipe—perfect for a weeknight dinner or a special occasion. 🍗🍅🥛


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (preferably packed in oil, drained)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Optional: fresh basil for garnish

Instructions

1. Cook the Chicken

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove from skillet and set aside.

2. Make the Sauce

  1. In the same skillet, sauté garlic for 30 seconds until fragrant.
  2. Add sun-dried tomatoes and cook for 1–2 minutes.
  3. Pour in chicken broth and heavy cream, stirring to combine.
  4. Add Parmesan cheese and Italian seasoning. Stir until sauce is smooth and slightly thickened (~3–5 minutes).

3. Combine & Simmer

  • Return chicken to the skillet and spoon sauce over the top.
  • Simmer for 5–7 minutes to let flavors meld and sauce thicken further.

4. Serve

  • Serve over pasta, rice, or mashed potatoes.
  • Garnish with fresh basil if desired.

Tips

  • Sun-Dried Tomatoes: Oil-packed tomatoes are more flavorful than dry-only.
  • Lighter Option: Use half-and-half instead of heavy cream for a lighter sauce.
  • Extra Flavor: Add a splash of white wine when sautéing garlic for depth.
  • Vegetables: Spinach, mushrooms, or roasted bell peppers can be added to the sauce for extra texture.
