Here’s a versatile Slow Cooker Chicken recipe—juicy, flavorful, and super easy:


Ingredients (serves 4–6)

  • 4–6 chicken thighs or breasts, bone-in or boneless
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme or Italian seasoning
  • Optional: 1 tablespoon lemon juice or balsamic vinegar
  • Optional vegetables: carrots, potatoes, bell peppers

Instructions

  1. Layer aromatics
    • Place onion slices and garlic at the bottom of the slow cooker.
  2. Season the chicken
    • Rub chicken with salt, pepper, paprika, and thyme. Place on top of onions.
  3. Add liquids
    • Pour chicken broth over the chicken. Add lemon juice or vinegar if using.
    • Arrange optional vegetables around the chicken.
  4. Cook
    • Cover and cook on low 6–7 hours or high 3–4 hours, until chicken is tender and fully cooked.
  5. Serve
    • Remove chicken and vegetables. Optional: use the cooking liquid to make a quick gravy by thickening with cornstarch.

  • Bone-in chicken stays juicier; boneless cooks faster.
  • For more flavor, sear chicken in a skillet for 2–3 minutes per side before slow cooking.
