Here’s a classic, comforting chicken soup recipe—hearty, flavorful, and easy to make 🍲🐔


🍗 Classic Chicken Soup (4–6 servings)

Ingredients

  • 1 lb (450 g) chicken (breasts, thighs, or a mix; bone-in adds flavor)
  • 6 cups water or chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium onion, diced
  • 2–3 cloves garlic, minced
  • 1–2 bay leaves
  • 1 tsp dried thyme or 2–3 sprigs fresh thyme
  • Salt & black pepper to taste
  • 1 cup noodles, rice, or small pasta (optional)
  • Fresh parsley for garnish

Instructions

  1. Cook the chicken:
    • In a large pot, combine chicken and water/broth. Bring to a boil, then reduce to a simmer. Skim foam if needed.
  2. Add vegetables & seasonings:
    • Add carrots, celery, onion, garlic, bay leaves, thyme, salt, and pepper. Simmer 30–40 min until chicken is cooked through.
  3. Shred chicken:
    • Remove chicken, shred it with two forks, discard bones if using bone-in, and return meat to the pot.
  4. Optional: Add pasta/rice:
    • If using noodles or rice, add them 10–15 min before serving and cook until tender.
  5. Adjust seasoning & serve:
    • Taste and add more salt/pepper as needed.
    • Garnish with fresh parsley. Serve hot.

🔄 Variations

  • Ginger garlic chicken soup: Add 1–2 slices fresh ginger and extra garlic.
  • Lemon chicken soup: Add 1–2 tbsp lemon juice at the end for brightness.
  • Vegetable-packed: Add peas, corn, or spinach near the end of cooking.
  • Creamy version: Stir in ½ cup cream or coconut milk at the end.

💡 Tips

  • Bone-in chicken gives richer broth.
  • Skim the fat if you want a lighter soup.
  • Make ahead: soup often tastes even better the next day.
