Cowboy Casserole

Here’s a classic Cowboy Casserole—hearty, cheesy, and ridiculously satisfying.


Cowboy Casserole (serves 4–6)

Ingredients

  • 450 g / 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz / 300 g) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can corn, drained
  • 1 tsp paprika
  • ½ tsp chili powder (optional)
  • Salt & black pepper
  • 1 bag frozen tater tots

Optional Add-ins

  • Green beans
  • Jalapeños
  • Cooked bacon bits

Instructions

  1. Brown the beef
    Heat oven to 200°C / 400°F.
    Brown beef with onion until cooked through. Drain excess fat.
    Stir in garlic, paprika, chili powder, salt & pepper.
  2. Mix the filling
    Add soup, sour cream, corn, and half the cheese. Mix well.
  3. Assemble
    Spread mixture in a greased baking dish.
    Sprinkle remaining cheese on top.
    Arrange tater tots evenly over everything.
  4. Bake
    Bake uncovered 35–40 minutes until bubbly and tots are crispy.
  5. Finish
    Rest 5 minutes. Optional: sprinkle green onions or parsley.

Pro Tips

  • Extra crispy tots: Bake them separately for 10 min first, then add on top
  • Tex-Mex twist: Add taco seasoning + pepper jack
  • Chicken version: Swap beef for shredded chicken
