Creamy Chicken and Rice

Ingredients

  • 1 lb chicken breast or thighs, diced
  • 1 tbsp butter or oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked rice (white, long-grain, or jasmine)
  • 2½ cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 tsp salt (to taste)
  • ½ tsp black pepper
  • ½ tsp paprika or dried thyme
  • Optional: 1 cup frozen peas, carrots, or broccoli
  • Optional: ½ cup shredded cheddar or Parmesan cheese

Instructions

  1. Cook chicken
    In a large skillet or pot, heat butter or oil over medium heat. Cook chicken until browned and mostly cooked through. Remove and set aside.
  2. Sauté aromatics
    In the same pot, cook onion and garlic until soft (3–5 minutes).
  3. Add rice & liquid
    Stir in rice, chicken broth, salt, pepper, and spices. Bring to a gentle boil, then reduce heat to low. Cover and simmer 15–20 minutes until rice is tender and liquid is mostly absorbed.
  4. Finish creamy
    Stir in cream (and vegetables if using) and return chicken to the pot. Cook 5 more minutes until heated through and creamy.
  5. Optional cheese
    Stir in shredded cheese for extra richness.

Tips & Variations

  • One-pot shortcut: cook chicken, rice, and sauce all together from the start (increase broth slightly)
  • Flavor boost: add garlic powder, onion powder, or a squeeze of lemon
  • Creamy but lighter: use half-and-half or Greek yogurt instead of heavy cream
  • Extra hearty: add mushrooms or bell peppers
