Creamy Tuscan Chicken 🍗🍅—a rich, flavorful dish with tender chicken, spinach, sun-dried tomatoes, and a creamy garlic sauce. Perfect for a weeknight dinner!


Creamy Tuscan Chicken

Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • Optional: red pepper flakes for a little heat

Instructions

1. Cook chicken

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear chicken 5–6 minutes per side until golden and cooked through (internal temp 165°F/74°C).
  4. Remove chicken and set aside.

2. Make sauce

  1. In the same skillet, sauté garlic ~30 seconds until fragrant.
  2. Add sun-dried tomatoes and Italian seasoning; cook 1–2 minutes.
  3. Pour in heavy cream and chicken broth; stir well.
  4. Add Parmesan and stir until melted and smooth.

3. Finish

  1. Add spinach and cook until wilted.
  2. Return chicken to skillet, spoon sauce over, and simmer 2–3 minutes.

4. Serve

  • Over pasta, rice, or mashed potatoes.
  • Garnish with extra Parmesan and parsley if desired.

Tips

  • Sun-dried tomatoes in oil add extra richness.
  • For thinner sauce, add more chicken broth.
  • Optional: add mushrooms or a splash of white wine for extra depth.
