Crockpot pepper steak

Here’s a simple and flavorful Crockpot Pepper Steak recipe that’s perfect for a slow-cooked, tender meal:


Ingredients (4 servings)

  • 1.5 lb (680g) beef sirloin or flank steak, thinly sliced into strips
  • 3 bell peppers (red, green, yellow), sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/3 cup beef broth
  • 1/4 cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 tsp black pepper (freshly ground preferred)
  • 1 tsp sugar or honey (optional, balances flavors)
  • 1–2 tbsp vegetable oil (for searing, optional)

Instructions

  1. Optional sear (for extra flavor):
    • Heat oil in a skillet over medium-high heat.
    • Quickly sear beef strips for 1–2 minutes until browned.
    • This step is optional but adds depth of flavor.
  2. Add to Crockpot:
    • Place sliced peppers, onions, and garlic in the bottom of the slow cooker.
    • Add the beef on top.
  3. Make the sauce:
    • In a bowl, mix beef broth, soy sauce, Worcestershire sauce, black pepper, and sugar/honey.
    • Pour over the beef and vegetables.
  4. Cook:
    • Cover and cook on low for 6–7 hours or high for 3–4 hours until beef is tender.
  5. Thicken the sauce:
    • About 30 minutes before serving, mix cornstarch with water to make a slurry.
    • Stir into the Crockpot and cook until sauce thickens.
  6. Serve:
    • Spoon over steamed rice or noodles.
    • Garnish with green onions if desired.

This method gives you tender, flavorful beef with soft but not mushy peppers.
