Crockpot Potato Soup
Ingredients
- 2 lb potatoes, peeled & diced (Yukon Gold or Russet)
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 cups chicken broth
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1 cup milk or half-and-half
- ½ cup sour cream
- 1 cup shredded cheddar
- 4 slices bacon, cooked & crumbled (optional but 👑)
- 2 tbsp butter
Instructions
- Add potatoes, onion, garlic, broth, salt, pepper, paprika, and butter to crockpot.
- Cook LOW 6–7 hours or HIGH 3–4 hours until potatoes are super tender.
- Mash some of the potatoes (or blend a bit) right in the crockpot.
- Stir in milk, sour cream, and cheddar.
- Cook another 20–30 minutes until creamy and hot.

- Sour cream
- Crack of black pepper
