Crockpot Potato Soup

Here’s a rich, comforting crockpot potato soup that basically cooks itself:

Crockpot Potato Soup

Ingredients

  • 2 lb potatoes, peeled & diced (Yukon Gold or Russet)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 cup milk or half-and-half
  • ½ cup sour cream
  • 1 cup shredded cheddar
  • 4 slices bacon, cooked & crumbled (optional but 👑)
  • 2 tbsp butter

Instructions

  1. Add potatoes, onion, garlic, broth, salt, pepper, paprika, and butter to crockpot.
  2. Cook LOW 6–7 hours or HIGH 3–4 hours until potatoes are super tender.
  3. Mash some of the potatoes (or blend a bit) right in the crockpot.
  4. Stir in milk, sour cream, and cheddar.
  5. Cook another 20–30 minutes until creamy and hot.

Top it like a baked potato

  • Extra cheese
  • Bacon
  • Green onions
  • Sour cream
  • Crack of black pepper

Quick upgrades

  • Add diced ham or shredded chicken
  • Toss in a block of cream cheese for ultra-creamy vibes
  • Use heavy cream if you’re feeling indulgent
