Here’s a classic, easy recipe for Ground Beef Enchiladas 🌮🔥

Ingredients (serves 4)

  • 500 g (1 lb) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 packet (or 2 tbsp) taco seasoning
  • 1 cup enchilada sauce (red is classic)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 8 flour or corn tortillas
  • Salt & pepper to taste

Optional toppings: sour cream, chopped cilantro, diced tomatoes, jalapeños


Instructions

  1. Preheat oven to 180°C / 350°F.
  2. Heat olive oil in a pan. Sauté onion until soft, then add garlic (30 sec).
  3. Add ground beef, cook until browned. Drain excess fat.
  4. Stir in taco seasoning and ¼ cup enchilada sauce. Simmer 2–3 minutes.
  5. Warm tortillas slightly so they don’t crack.
  6. Fill each tortilla with beef mixture + a little cheese. Roll tightly.
  7. Place seam-side down in a baking dish.
  8. Pour remaining enchilada sauce over the top and sprinkle with cheese.
  9. Bake 20–25 minutes until bubbly and lightly golden.

Tips & Variations

  • Add black beans or corn to the beef for extra texture.
  • Swap beef for ground chicken or turkey.
  • For extra heat, add chipotle or chili flakes to the sauce.
