Simple Cucumber Salad

Ingredients

  • 2–3 cucumbers, thinly sliced (English or Kirby cucumbers work well)
  • 1/2 red onion, thinly sliced
  • 1/4 cup white vinegar (or apple cider vinegar)
  • 1–2 tsp sugar (adjust to taste)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1–2 tbsp fresh dill, chopped (optional)

Instructions

  1. Prepare the cucumbers:
    • Slice cucumbers thinly. You can use a mandoline for uniform slices.
    • Optionally, sprinkle with a pinch of salt and let sit 10 minutes, then drain excess water for crisper salad.
  2. Mix the dressing:
    • In a small bowl, whisk together vinegar, sugar, salt, and pepper until sugar dissolves.
  3. Combine:
    • In a large bowl, toss cucumbers and red onion with the dressing.
    • Add chopped dill if using.
  4. Chill and serve:
    • Refrigerate at least 15–30 minutes for flavors to meld.
    • Serve cold as a refreshing side dish.

Tips
