Cucumber Tomato Salad

Ingredients (Serves 4)

  • 2 medium cucumbers, sliced or diced
  • 3–4 medium tomatoes, chopped (cherry tomatoes halved works too)
  • ¼ red onion, thinly sliced (optional)
  • 2 tbsp olive oil
  • 1–2 tbsp red wine vinegar or lemon juice
  • Salt & pepper, to taste
  • Optional: fresh herbs (basil, parsley, or dill)
  • Optional: ¼ cup feta cheese or mozzarella pearls

Instructions

  1. Prep vegetables
  • Slice cucumbers and chop tomatoes.
  • Slice red onion if using.
  1. Mix dressing
  • In a small bowl, whisk olive oil, vinegar (or lemon juice), salt, and pepper.
  1. Combine
  • Toss cucumbers, tomatoes, and onion with dressing.
  • Add fresh herbs and optional cheese.
  1. Chill & serve
  • Chill in the fridge 15–30 minutes for flavors to meld.
  • Serve cold as a side dish.

Tips

  • Use ripe, juicy tomatoes for best flavor.
  • Seed cucumbers if you want less watery salad.
  • Add a splash of balsamic vinegar for a sweeter touch.
