Fish Soup (Serves 4–6)

Ingredients

  • 1 lb firm white fish (cod, halibut, or tilapia), cut into chunks
  • 6 cups fish or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can (14 oz) diced tomatoes (optional)
  • 1 bay leaf
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Optional: ½ cup white wine
  • Optional: fresh parsley or dill for garnish

Instructions

  1. Sauté vegetables
    • Heat olive oil in a large pot over medium heat
    • Add onion, carrots, and celery, sauté 5–7 minutes until softened
    • Add garlic and cook 1 minute
  2. Add liquids & seasonings
    • Stir in broth, diced tomatoes (if using), bay leaf, paprika, and white wine (optional)
    • Bring to a boil, then reduce to a simmer 15–20 minutes
  3. Cook fish
    • Add fish chunks
    • Simmer gently 5–8 minutes until fish is opaque and flakes easily
  4. Finish & serve
    • Remove bay leaf
    • Adjust salt and pepper
    • Garnish with fresh parsley or dill
    • Serve hot with crusty bread

Tips & Variations

  • Spicy version: add a pinch of red pepper flakes or cayenne
  • Mediterranean style: add olives, capers, and a splash of lemon juice
  • Creamy fish soup: stir in ½ cup cream or coconut milk at the end
  • Mixed seafood: add shrimp, clams, or mussels for a seafood medley
