  1. Cook red beans and rice

    • Add soaked red beans, broth, and spices. Simmer 45–60 minutes until beans are tender.
    • Cook rice separately according to package directions.
  2. Prepare catfish for frying
    • Mix cornmeal, flour, paprika, cayenne, salt, and pepper in a shallow dish.
    • Pat catfish dry and coat evenly in the cornmeal mixture.
  3. Fry catfish
    • Heat oil in a skillet over medium-high heat.
    • Fry catfish 3–5 minutes per side until golden brown and cooked through. Drain on paper towels.
  4. Serve
    • Place rice on a plate, spoon red beans over the rice, and top with fried catfish.
