🥩 Garlic Butter Steak & Potatoes Skillet (Serves 2–4)

Ingredients

  • 2–4 small steaks (ribeye, sirloin, or strip; ~1 inch thick)
  • 1 lb small baby potatoes or 2–3 medium potatoes, diced
  • 3–4 tbsp butter, divided
  • 3–4 cloves garlic, minced
  • 1 tsp paprika (optional)
  • 1 tsp fresh thyme or rosemary (optional)
  • Salt & black pepper to taste
  • 2 tbsp olive oil

Instructions

1️⃣ Prep

  • Rinse and dice potatoes (small cubes or halves for baby potatoes).
  • Pat steaks dry and season generously with salt, pepper, and paprika.

2️⃣ Cook potatoes

  1. Heat 1–2 tbsp olive oil in a large skillet over medium heat.
  2. Add potatoes, season with salt and pepper.
  3. Cook 12–15 min, stirring occasionally, until crispy and tender.
  4. Push potatoes to the side of the skillet.

3️⃣ Cook steaks

  1. Increase heat to medium-high.
  2. Add 1 tbsp butter to skillet.
  3. Sear steaks 3–4 min per side (depending on thickness and desired doneness).
  4. Optional: add fresh thyme or rosemary on top while cooking.

4️⃣ Add garlic butter

  1. Reduce heat to medium.
  2. Add remaining butter and garlic to the pan.
  3. Spoon melted garlic butter over steaks and potatoes for 1–2 min.

5️⃣ Rest & serve

  • Remove steaks and let rest 5 minutes.
  • Serve with garlic butter-coated potatoes, drizzle extra pan juices over the top.

🔄 Variations

  • Cheesy potatoes: Sprinkle shredded cheddar over potatoes at the end.
  • Spicy: Add a pinch of red pepper flakes to the garlic butter.
  • Veggie boost: Toss in green beans or spinach in the last 2–3 min.
  • Herb twist: Use rosemary, sage, or oregano instead of thyme.

  • Let steaks come to room temperature before cooking.
  • Don’t overcrowd the skillet—cook potatoes in batches if needed.
