Garlic Butter Steak Bites and Eggs

Ingredients (2 servings)

  • 8 oz sirloin or ribeye steak, cut into 1-inch cubes
  • 2–3 eggs
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Optional: chopped parsley, red pepper flakes

Instructions

  1. Prep steak
    • Pat steak cubes dry with paper towels
    • Season generously with salt and pepper
  2. Cook steak bites
    • Heat a large skillet over medium-high heat
    • Add 1 tbsp butter
    • Add steak cubes in a single layer, searing 2–3 minutes per side until browned
    • Remove steak from pan and set aside
  3. Make garlic butter
    • Lower heat to medium
    • Add remaining butter and garlic to pan
    • Sauté 30–60 seconds until fragrant
  4. Cook eggs
    • Push garlic to the side
    • Crack eggs into pan and cook sunny-side up or to your liking
  5. Combine & Serve
    • Return steak bites to pan to coat in garlic butter
    • Sprinkle with parsley or red pepper flakes
    • Serve immediately

  • Cheesy twist: add shredded cheddar or parmesan over eggs
  • Veggie boost: sauté mushrooms, spinach, or cherry tomatoes with garlic butter
