Here’s a simple and healthy Grilled Chicken & Broccoli Bowl recipe—perfect for a quick weeknight dinner or meal prep. 🍗🥦🍚


Ingredients

For the Chicken

  • 1 lb (450 g) chicken breast, boneless and skinless
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Optional: 1 tsp soy sauce or lemon juice for extra flavor

For the Broccoli

  • 2 cups broccoli florets
  • 1 tbsp olive oil
  • Salt and pepper, to taste

For the Bowl

  • 2 cups cooked rice or quinoa
  • Optional toppings: sesame seeds, sliced green onions, soy sauce, teriyaki sauce, or sriracha

Instructions

1. Marinate & Grill the Chicken

  1. Toss chicken with olive oil, garlic powder, paprika, salt, pepper, and optional soy sauce or lemon juice.
  2. Preheat a grill or grill pan over medium-high heat.
  3. Grill chicken 5–7 minutes per side, or until fully cooked and juices run clear.
  4. Let rest 5 minutes, then slice into strips.

2. Cook the Broccoli

  • Toss broccoli with olive oil, salt, and pepper.
  • Roast in oven at 400°F (200°C) for 12–15 minutes, or steam on stovetop for 5–6 minutes until tender but still crisp.

3. Assemble the Bowls

  1. Divide rice or quinoa into serving bowls.
  2. Top with grilled chicken slices and broccoli.
  3. Drizzle with your choice of sauce and sprinkle with sesame seeds or green onions.

Tips

  • Meal Prep: Cook chicken, rice, and broccoli ahead; assemble bowls during the week.
  • Flavor Variations: Use a teriyaki glaze, lemon-garlic sauce, or honey-soy dressing for different tastes.
  • Vegetables: Add bell peppers, carrots, snap peas, or zucchini for more color and nutrients.
