Easy One-Pan Grocery Staples Skillet

(No fancy stuff, all basic grocery items)

Ingredients

  • 1 lb chicken breast or ground beef
  • 2 tbsp oil or butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 potatoes or 1 cup rice (your choice)
  • 1 bell pepper or carrots
  • 1 can diced tomatoes
  • 1 cup broth or water
  • Salt & pepper
  • Paprika or chili powder (optional)
  • Cheese (optional but encouraged)

Instructions

  1. Cook protein
    Heat oil in a large pan. Add chicken (cubed) or ground beef. Season with salt & pepper. Cook until browned. Remove and set aside.
  2. Sauté veggies
    In the same pan, add onion and garlic. Cook until soft. Add peppers or carrots.
  3. Add starch
    • Potatoes: dice small, add to pan
    • Rice: add directly to pan
      Stir for 1 minute.
  4. Simmer
    Add canned tomatoes + broth. Season with paprika or chili powder. Cover and simmer:

    • Potatoes: 15–20 min
    • Rice: ~18 min
      Until tender.
  5. Finish
    Return meat to pan. Stir, taste, adjust seasoning.
    Top with cheese, cover 2–3 min until melted.

Serve with

  • Bread or tortillas
  • A fried egg on top (trust me)
