Ham, Green Beans, and Potatoes Skillet (serves 4)

Ingredients

  • 2 cups cooked ham, diced (leftover ham works perfectly)
  • 4–5 medium potatoes, diced
  • 2 cups green beans (fresh or frozen, trimmed)
  • 2 tbsp olive oil or butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Salt & black pepper
  • Optional: smoked paprika, thyme, or parsley

Instructions

  1. Cook the potatoes
    • Boil diced potatoes in salted water 8–10 min until just tender. Drain.
    • Alternatively, roast at 220°C / 425°F with olive oil for 20–25 min for extra crispiness.
  2. Sauté aromatics
    • In a large skillet, heat oil/butter over medium heat.
    • Cook onion until soft, then add garlic for 30 seconds.
  3. Add green beans
    • Cook 5–7 min until tender-crisp (longer if using frozen).
  4. Combine everything
    • Add ham and potatoes to the skillet.
    • Season with salt, pepper, and optional spices.
    • Stir gently and cook until everything is heated through.
  5. Serve hot
    • Sprinkle with parsley or a little cheese if desired.

Variations

  • Creamy version: Stir in ½ cup cream or sour cream at the end
  • One-pan oven bake: Toss potatoes, green beans, and ham with oil/spices, bake 25–30 min at 200°C / 400°F
  • Add bacon: For smoky flavor, crisp some bacon first and cook vegetables in the rendered fat
