Italian Drunken Noodles

Here’s a safe, easy Italian “Drunken” Noodles–style recipe 🍝🌿
(Traditionally it uses wine, but I’ll give you a non-alcohol version that tastes great.)

Italian Drunken Noodles (No Alcohol)

Ingredients

  • 8 oz egg noodles or pappardelle pasta
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 small onion (sliced)
  • 1 bell pepper (sliced)
  • 1 cup cherry tomatoes (halved) or canned diced tomatoes
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional, mild heat)
  • ½ cup vegetable or chicken broth
    • (Optional flavor boost: add 1 tbsp grape juice or balsamic vinegar)
  • Salt & pepper to taste
  • Fresh basil or parsley (optional)
  • Parmesan cheese (optional)

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat.
  3. Add onion and bell pepper; cook 3–4 minutes until soft.
  4. Add garlic and cook 30 seconds.
  5. Add tomatoes, Italian seasoning, salt, pepper, and red pepper flakes.
  6. Pour in broth (and optional grape juice or balsamic). Simmer 5–7 minutes.
  7. Toss in cooked noodles and mix well.
  8. Taste and adjust seasoning.
  9. Top with herbs and Parmesan if you like.

Optional Add-Ins

  • Cooked chicken or sausage (ask an adult to help)
  • Mushrooms or zucchini
  • Spinach stirred in at the end
