Lasagna soup

Here’s a hearty and comforting Lasagna Soup — all the flavors of classic lasagna in a cozy, brothy soup.


🍲 Lasagna Soup

Ingredients

  • 1 lb ground beef, Italian sausage, or a mix
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or beef broth
  • 2 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional)
  • Salt & pepper, to taste
  • 6–8 oz broken lasagna noodles (or regular pasta)
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley, for garnish

Instructions

1️⃣ Cook the meat

  • In a large pot, brown the ground beef or sausage over medium heat.
  • Remove excess fat if needed.
  • Add onion and garlic and sauté 3–5 minutes until softened.

2️⃣ Add liquids and seasonings

  • Stir in crushed tomatoes, broth, Italian seasoning, red pepper flakes, salt, and pepper.
  • Bring to a simmer.

3️⃣ Cook the pasta

  • Add broken lasagna noodles to the simmering soup.
  • Cook according to package directions until al dente (usually 8–10 minutes).

4️⃣ Serve with cheeses

  • Ladle soup into bowls.
  • Add a spoonful of ricotta, sprinkle with Parmesan and mozzarella, and garnish with fresh herbs.

🔥 Tips & Variations

  • For a creamy version, stir a little heavy cream into the soup before serving.
  • Add sautéed mushrooms, spinach, or zucchini for extra veggies.
  • Use turkey or chicken sausage for a lighter version.
  • Make ahead: soup can be cooked without noodles, refrigerated, and noodles added just before reheating.
