🧾 Ingredients

  • 2 cups Cucumber, sliced thin
  • 2 cups Tomatoes, chopped or sliced
  • 1 small Onion, thinly sliced (red onion preferred)
  • ¼ cup White vinegar or apple cider vinegar
  • 2–3 tbsp Olive oil
  • 1 tsp Sugar (optional, balances acidity)
  • Salt and black pepper to taste
  • 1–2 tbsp Fresh herbs (parsley, dill, or basil)

  1. Prepare vegetables
    • Slice cucumbers thinly, chop or slice tomatoes, and thinly slice onion. Place in a large bowl.
  2. Make marinade
    • In a small bowl, whisk together vinegar, olive oil, sugar, salt, and black pepper.
  3. Combine and marinate
    • Pour the dressing over the vegetables and toss gently.
    • Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  4. Serve
    • Garnish with fresh herbs before serving. Serve chilled or at room temperature.
