Ingredients (makes 8 pockets)

  • 1 sheet puff pastry, thawed
  • 1 lb (450 g) ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • Salt & black pepper to taste
  • 1/4 cup chopped sun-dried tomatoes (or olives)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella or provolone
  • 1 egg, beaten (for egg wash)
  • Optional garnish: sesame seeds or fresh parsley

Instructions

  1. Preheat oven
    400°F (200°C). Line a baking sheet with parchment paper.
  2. Cook the beef filling
    Heat olive oil in a skillet over medium heat. Sauté onion until soft. Add garlic and cook 30 seconds.
    Add ground beef, cumin, paprika, oregano, salt, and pepper. Cook until browned.
    Stir in sun-dried tomatoes or olives. Remove from heat and let cool slightly.
  3. Prepare pastry
    Roll puff pastry lightly and cut into 8 equal squares.
  4. Fill & fold
    Place a spoonful of beef mixture in the center of each square.
    Top with feta and mozzarella.
    Fold into triangles or rectangles and seal edges with a fork.
  5. Egg wash
    Brush tops with beaten egg. Sprinkle with sesame seeds if using.
  6. Bake
    Bake 18–22 minutes, until golden brown and puffed.
  7. Serve
    Let cool 5 minutes. Garnish with parsley. Serve warm.
