🍫 Mounds Cake
Mounds cake is a rich chocolate cake inspired by the Mounds candy bar, featuring layers of chocolate cake, coconut filling, and chocolate frosting. It’s perfect for coconut and chocolate lovers.
🧾 Ingredients
Chocolate Cake:
- 1¾ cups all-purpose flour
- 2 cups sugar
- ¾ cup cocoa powder
- 1½ tsp baking powder
- 1½ tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup hot water or coffee
Coconut Filling:
- 2 cups sweetened shredded coconut
- 1 can (14 oz) sweetened condensed milk
- 1 tsp vanilla extract
Chocolate Frosting:
- 1 cup unsalted butter
- 3–4 cups powdered sugar
- ½ cup cocoa powder
- ½ cup milk
- 1 tsp vanilla extract
👩🍳 Instructions
1️⃣ Bake the cake
- Preheat oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- Mix dry ingredients (flour, sugar, cocoa, baking powder, baking soda, salt).
- Add eggs, buttermilk, oil, and vanilla. Mix well.
- Slowly add hot water or coffee; batter will be thin.
- Divide between pans and bake 30–35 minutes. Cool completely.
2️⃣ Make the coconut filling
- In a bowl, mix shredded coconut, sweetened condensed milk, and vanilla until combined.
3️⃣ Assemble the cake
- Place one cake layer on a plate. Spread coconut filling evenly on top.
- Place second cake layer on top.
4️⃣ Frost the cake
- Beat butter until creamy, gradually add powdered sugar, cocoa powder, milk, and vanilla.
- Frost the top and sides of the cake.
5️⃣ Optional
- Sprinkle extra shredded coconut on top for decoration.
