Oatmeal raisin cookie

Here’s a classic oatmeal raisin cookie recipe 🍪 — soft, chewy, and easy to make!


Ingredients (makes ~12 cookies)

  • ½ cup (115 g) butter, softened
  • ½ cup (100 g) brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ¾ cup (95 g) all-purpose flour
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 1 ½ cups (120 g) old-fashioned oats
  • ½ cup (75 g) raisins
  • Optional: ¼ cup chopped nuts (walnuts or pecans)

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients
    • In a bowl, cream together butter, brown sugar, and granulated sugar until smooth.
    • Beat in the egg and vanilla.
  3. Mix dry ingredients
    • In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. Combine
    • Gradually mix dry ingredients into the wet mixture.
    • Stir in oats, raisins, and nuts if using.
  5. Form cookies
    • Scoop tablespoon-sized portions onto the baking sheet, leaving space to spread.
  6. Bake
    • Bake 10–12 minutes until edges are lightly golden (centers will still be soft).
  7. Cool
    • Let cool 5 minutes on the sheet, then transfer to a wire rack to cool completely.
