Here’s a comforting, classic Old-Fashioned Meatloaf with Brown Gravy — tender, flavorful meatloaf topped with a rich homemade gravy.


🍖 Old-Fashioned Meatloaf with Brown Gravy

Ingredients

For the meatloaf:

  • 1 ½ lbs ground beef (or beef/pork mix)
  • 1 cup breadcrumbs
  • ½ cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Worcestershire sauce
  • ½ tsp dried thyme or Italian seasoning
  • ¼ cup ketchup (for topping)

For the brown gravy:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • Salt & pepper, to taste
  • 1 tsp Worcestershire sauce (optional)

Instructions

1️⃣ Preheat oven

  • Preheat oven to 350°F (175°C).
  • Grease a 9×5-inch loaf pan or line with parchment paper.

2️⃣ Prepare the meatloaf

  • In a large bowl, soak breadcrumbs in milk for 2–3 minutes.
  • Add ground meat, egg, onion, garlic, salt, pepper, Worcestershire sauce, and thyme.
  • Mix gently until just combined; overmixing can make the meatloaf tough.

3️⃣ Shape and bake

  • Form the mixture into a loaf and place in the prepared pan.
  • Spread ketchup evenly over the top.
  • Bake 55–65 minutes, until internal temperature reaches 160°F (71°C).

4️⃣ Make the brown gravy

  • In a saucepan, melt butter over medium heat.
  • Whisk in flour and cook 1–2 minutes until lightly browned.
  • Gradually whisk in beef broth, stirring constantly to prevent lumps.
  • Simmer 3–5 minutes until thickened.
  • Season with salt, pepper, and optional Worcestershire sauce.

5️⃣ Serve

  • Slice meatloaf and pour brown gravy over each serving.
  • Serve with mashed potatoes, green beans, or roasted vegetables.

🔥 Tips & Variations

  • Add chopped bell peppers, mushrooms, or grated carrot to the meat mixture for extra flavor.
  • For a richer gravy, deglaze the pan with a little broth using the meatloaf drippings.
  • Make mini meatloaves in muffin tins for individual portions.
  • Leftovers make excellent sandwiches with gravy or ketchup.
