- 1 clove garlic, minced
- 1 tsp salt
- ½ tsp black pepper

- ¼ cup ketchup (for topping)
For the brown gravy:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups beef broth

- 1 tsp Worcestershire sauce (optional)
Instructions
1️⃣ Preheat oven
- Preheat oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan or line with parchment paper.
2️⃣ Prepare the meatloaf
- In a large bowl, soak breadcrumbs in milk for 2–3 minutes.
- Add ground meat, egg, onion, garlic, salt, pepper, Worcestershire sauce, and thyme.
- Mix gently until just combined; overmixing can make the meatloaf tough.
3️⃣ Shape and bake
- Form the mixture into a loaf and place in the prepared pan.
- Spread ketchup evenly over the top.
- Bake 55–65 minutes, until internal temperature reaches 160°F (71°C).
4️⃣ Make the brown gravy
- In a saucepan, melt butter over medium heat.
- Whisk in flour and cook 1–2 minutes until lightly browned.
- Gradually whisk in beef broth, stirring constantly to prevent lumps.
- Simmer 3–5 minutes until thickened.
- Season with salt, pepper, and optional Worcestershire sauce.
5️⃣ Serve
- Slice meatloaf and pour brown gravy over each serving.
- Serve with mashed potatoes, green beans, or roasted vegetables.
🔥 Tips & Variations
- Add chopped bell peppers, mushrooms, or grated carrot to the meat mixture for extra flavor.
- For a richer gravy, deglaze the pan with a little broth using the meatloaf drippings.
