🍝 Pasta with Poached Egg (Serves 2)

Ingredients

  • 6 oz (170 g) pasta (spaghetti, fettuccine, or your favorite)
  • 2 large eggs
  • 2 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • ¼ tsp red pepper flakes (optional)
  • ¼ cup grated Parmesan cheese
  • Salt & black pepper to taste

Instructions

1️⃣ Cook pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook pasta according to package directions until al dente.
  3. Reserve ¼ cup pasta water before draining.

2️⃣ Prepare poached eggs

  1. Fill a small saucepan with 2–3 inches of water. Bring to a gentle simmer.
  2. Add 1 tsp vinegar (optional, helps egg whites coagulate).
  3. Crack each egg into a small bowl, then gently slide into simmering water.
  4. Poach 3–4 minutes for runny yolk, 5 minutes for slightly firmer yolk.
  5. Remove with a slotted spoon and drain on paper towel.

3️⃣ Make garlic oil

  1. In a skillet, heat olive oil or butter over medium heat.
  2. Add garlic and red pepper flakes, sauté 1–2 minutes until fragrant.
  3. Add cooked pasta and toss with garlic oil.
  4. Add reserved pasta water a little at a time for creaminess.

4️⃣ Assemble

  1. Divide pasta between bowls.
  2. Place a poached egg on top of each serving.
  3. Sprinkle with Parmesan, salt, pepper, and fresh herbs.
  4. Break the yolk and mix into the pasta before eating for a silky sauce.
