Peanut Butter Balls

Ingredients (makes ~24 balls)

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 cups graham cracker crumbs (or crushed digestive biscuits)
  • 12 oz chocolate chips or melting chocolate (milk, dark, or semi-sweet)

Instructions

  1. Make the filling
    • In a large bowl, mix peanut butter and butter until smooth
    • Add powdered sugar and graham cracker crumbs
    • Stir until well combined and dough holds together
  2. Shape balls
    • Roll mixture into 1-inch balls
    • Place on a parchment-lined baking sheet
    • Chill 30 minutes in the refrigerator
  3. Dip in chocolate
    • Melt chocolate in a microwave or double boiler
    • Dip each peanut butter ball into melted chocolate, coating completely
    • Return to parchment-lined sheet
  4. Chill & set
