Pecan cookies

Here’s a simple, classic pecan cookie recipe—crispy on the edges, soft in the middle 🌰🍪


Pecan Cookies

Ingredients

  • ½ cup butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1¼ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup chopped pecans

Instructions

  1. Preheat oven to 175°C / 350°F. Line a baking sheet with parchment.
  2. Cream butter and sugars until fluffy.
  3. Mix in egg and vanilla.
  4. In a separate bowl, whisk flour, baking soda, and salt.
  5. Gradually mix dry ingredients into wet ingredients.
  6. Fold in chopped pecans.
  7. Scoop dough (about 1½ tbsp each) onto baking sheet.
  8. Bake 10–12 minutes, until edges are lightly golden.
  9. Cool on pan for 5 minutes, then transfer to a rack.

Optional Variations

  • Butter pecan: Toast the pecans first.
  • Chocolate pecan: Add ½ cup chocolate chips.
  • Maple pecan: Replace vanilla with maple extract.
