Pineapple Heaven Cake

Here’s the classic Pineapple Heaven Cake 🍍—super easy, moist, and perfect for potlucks or dessert nights.

Pineapple Heaven Cake (No Mixer Needed)

Ingredients

  • 1 box yellow cake mix
  • 1 can (20 oz) crushed pineapple (DO NOT drain)
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract

Topping

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk
  • 1 tub (8 oz) whipped topping (Cool Whip)
  • Optional garnish: shredded coconut or chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.
  2. In a large bowl, mix cake mix, crushed pineapple (with juice), eggs, oil, and vanilla until smooth.
  3. Pour batter into the pan.
  4. Bake 30–35 minutes, until a toothpick comes out clean.
  5. Let cake cool completely.

Topping

  1. Whisk pudding mix with milk until thick.
  2. Fold in whipped topping.
  3. Spread evenly over cooled cake.
  4. Chill at least 1 hour before serving.

Tips & Variations ✨

  • Add mandarin oranges to the topping for extra fruitiness
  • Use coconut pudding instead of vanilla for a tropical twist
  • Sprinkle toasted coconut on top
