Pineapple Quik Bread

Pineapple Quick Bread is a moist, sweet, and easy-to-make loaf that’s perfect for breakfast, snacks, or dessert. The pineapple keeps it tender and adds a naturally fruity flavor. 🍍🍞


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon (optional)
  • ½ cup (115 g) butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 can (8 oz) crushed pineapple, drained
  • ½ cup chopped nuts (optional, walnuts or pecans)

Instructions

1. Preheat Oven

  • Preheat oven to 175°C (350°F).
  • Grease and flour a 9×5-inch loaf pan.

2. Mix Dry Ingredients

  • In a bowl, whisk together flour, baking soda, salt, and cinnamon.

3. Mix Wet Ingredients

  • In a large bowl, beat butter and sugar until light and fluffy.
  • Add eggs one at a time, then stir in vanilla and pineapple.

4. Combine

  • Gradually add dry ingredients to the wet mixture, mixing just until combined.
  • Fold in nuts if using.

5. Bake

  • Pour batter into prepared pan.
  • Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool 10 minutes in the pan, then transfer to a wire rack.

Tips

  • For extra moisture, do not over-drain the pineapple.
  • Optional: top with a light powdered sugar glaze or cream cheese frosting.
  • Can be made into mini loaves or muffins for gift-giving or portion control.
