Here’s a simple, foolproof way to make crispy pork belly — tender inside, crackly on top 🐖✨


🔥 Crispy Roasted Pork Belly

🛒 Ingredients

  • 2–3 lbs pork belly (skin-on)
  • 1 tbsp salt (plus extra for skin)
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika (optional)
  • 1 tbsp oil or vinegar (for skin)

👩‍🍳 Instructions

1️⃣ Prep the skin (most important step)

  • Pat the pork belly very dry with paper towels.
  • Score the skin in thin lines (don’t cut into the meat).
  • Rub salt generously into the skin and lightly season the meat side with salt, pepper, garlic powder, and paprika.

💡 For extra crispiness: Leave uncovered in the fridge overnight to dry out the skin.


2️⃣ Roast low and slow

  • Preheat oven to 300°F (150°C).
  • Place pork belly on a rack over a baking sheet (skin-side up).
  • Roast for 2–2½ hours until very tender.

3️⃣ Crisp the skin

  • Increase oven to 450°F (230°C) or broil.
  • Roast 20–30 minutes until skin bubbles and crisps. Watch carefully to prevent burning.

4️⃣ Rest & slice

  • Rest 10–15 minutes before slicing.

🍽️ Serving Ideas

  • Slice and serve with rice and stir-fried greens
  • Make pork belly tacos
  • Use in ramen
  • Toss with hoisin glaze for an Asian-style finish
