Ingredients

  • 3–4 lb (1.4–1.8 kg) pork loin or shoulder roast
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried rosemary (or fresh sprigs)
  • 1 tsp thyme
  • 1 cup chicken broth or white wine
  • 1 large onion, sliced
  • Optional: carrots and potatoes for roasting

Instructions

1. Preheat Oven

  • Preheat oven to 350°F (175°C).

2. Prepare the Pork

  1. Pat the roast dry.
  2. Mix olive oil, garlic, salt, pepper, rosemary, and thyme.
  3. Rub the mixture all over the pork.

3. Roast

  1. Place roast on a rack in a roasting pan.
  2. Surround with onion slices and optional vegetables.
  3. Pour broth or wine into the pan.
  4. Roast 1 ½–2 hours (or about 20 minutes per pound), until internal temperature reaches 145°F (63°C).

4. Rest & Serve

  • Let the roast rest 10–15 minutes before slicing.
  • Serve with pan juices or make a quick gravy from the drippings.

Tips

  • Flavor boost: Sear roast in a hot skillet for 2–3 minutes per side before roasting to lock in juices.
  • Vegetables: Carrots, potatoes, and parsnips roast beautifully alongside the pork.
  • Glaze option: Brush with honey, mustard, or apple cider glaze during the last 20 minutes for a sweet-savory finish.
