Ingredients

  • 2 lb potatoes (russet or Yukon gold), sliced or diced
  • 1 large onion, sliced
  • 3 tbsp butter or olive oil
  • Salt & black pepper to taste
  • Optional: garlic powder, paprika, or fresh herbs

Instructions

Stovetop (classic)

  1. Heat butter or oil in a large skillet over medium heat.
  2. Add potatoes in a single layer. Season with salt and pepper.
  3. Cover and cook 8–10 minutes, stirring occasionally, until potatoes start to soften.
  4. Add onions, uncover, and cook another 10–15 minutes, stirring, until potatoes are golden and onions are caramelized.
  5. Taste and adjust seasoning. Serve hot.

Oven-Roasted Version

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes and onions with oil, salt, pepper, and optional seasonings.
  3. Spread on a baking sheet.
  4. Roast 30–40 minutes, flipping halfway, until crispy and browned.
