🌭 Cooking Sausage

1️⃣ Types of Sausage

  • Fresh (raw) sausage: Pork, beef, chicken, or turkey (Italian, breakfast, bratwurst)
  • Cooked/Smoked sausage: Kielbasa, Andouille, chorizo (already cooked—just heat)

2️⃣ Cooking Methods for Fresh Sausage

Pan-Frying (Quick)

  1. Heat 1–2 tbsp oil in a skillet over medium heat.
  2. Add sausage links or patties.
  3. Cook 12–15 min, turning occasionally until browned and internal temp 160°F (71°C) for pork/beef, 165°F (74°C) for poultry.

Boiling & Pan-Searing

  1. Simmer sausages in water or broth for 10 min.
  2. Remove, pat dry, and sear in a skillet for 2–3 min per side for extra flavor.

Baking

  1. Preheat oven to 375°F (190°C).
  2. Place sausages on a baking sheet.
  3. Bake 20–25 min, turning halfway.

Grilling

  1. Preheat grill to medium.
  2. Grill sausages 12–15 min, turning occasionally, until evenly browned.

3️⃣ Tips

  • Piercing sausage: Avoid piercing before cooking—it lets juices escape.
  • Flavor boost: Sauté with onions, garlic, peppers, or a splash of wine.
  • Internal temp: Always check for doneness with a meat thermometer.

4️⃣ Using Sausage in Recipes

  • Breakfast: Scrambled eggs, breakfast sandwiches, or hash.
  • Pasta: Slice and sauté in tomato sauce, creamy pasta, or risotto.
  • Casseroles & Soups: Add chunks to bean soups, stews, or baked casseroles.
  • Pizza & Sandwiches: Slice and layer on pizza or inside hoagies.
  • Grilled or roasted veggies: Toss with peppers, onions, and zucchini.
