Sausage and potatoes

Here’s a simple and hearty Sausage and Potatoes recipe—perfect for a one-pan meal:


Ingredients (serves 4)

  • 1 pound (≈450 g) sausage links or smoked sausage, sliced into 1-inch pieces
  • 1.5 pounds (≈680 g) potatoes, diced (Yukon Gold, red, or Russet)
  • 1 onion, chopped
  • 2–3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Optional: 1 teaspoon dried rosemary or thyme
  • Fresh parsley for garnish

Instructions

  1. Preheat oven
    • 400°F (200°C).
  2. Prep potatoes
    • Toss diced potatoes with 1 tablespoon olive oil, salt, pepper, paprika, and herbs. Spread on a baking sheet.
  3. Roast potatoes
    • Bake 15–20 minutes until slightly tender.
  4. Cook sausage & onions
    • In a skillet, heat 1 tablespoon olive oil over medium heat.
    • Sauté onions and garlic until soft.
    • Add sausage slices and cook until browned.
  5. Combine & finish roasting
    • Add the partially roasted potatoes to the skillet (or return everything to the baking sheet).
    • Roast together 10–15 more minutes until potatoes are golden and sausage is fully cooked.
  6. Serve
    • Garnish with fresh parsley. Serve hot, optionally with mustard or a dipping sauce.

💡 Tips:

  • For extra flavor, use smoked sausage or Andouille sausage.
  • Add bell peppers or carrots for more color and veggies.
  • This can also be made entirely on the stovetop in a large skillet if you want faster cleanup.
