Instructions

  2. Cook the Potatoes:
    • Boil potatoes in salted water until tender, about 15–20 minutes.
    • Drain, mash with butter and milk, season with salt and pepper. Set aside.
  3. Make the Filling:
    • Heat olive oil in a pan over medium heat.
    • Sauté onion, carrot, and garlic until softened.
    • Add ground lamb, cooking until browned. Drain excess fat if necessary.
    • Stir in tomato paste, broth, Worcestershire sauce, thyme, salt, and pepper.
    • Simmer 5–10 minutes until slightly thickened. Add peas at the end.
  4. Assemble the Pie:
    • Transfer meat mixture to a baking dish, spreading evenly.
    • Top with mashed potatoes, smoothing with a spatula. Optional: create ridges for a golden crust.
    • Sprinkle cheese on top if using.
  5. Bake:
    • Bake for 20–25 minutes until the topping is golden and edges are bubbling.
  6. Serve:
