🥩 Slow Cooker Pepper Steak (4 servings)

Ingredients

  • 1 lb (450 g) beef sirloin or flank steak, thinly sliced
  • 2 bell peppers, sliced (any color)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • ¼ cup soy sauce
  • 2 tbsp oyster sauce (optional, adds depth)
  • 1–2 tsp black pepper (freshly ground)
  • 1 tsp cornstarch (optional, for thickening)
  • 2 tbsp water (if using cornstarch)
  • 1 tbsp oil

Instructions

  1. Prep beef:
    • Season beef slices lightly with salt and black pepper.
    • Optional: Sear in a skillet with a little oil 1–2 min per side for extra flavor (skip if short on time).
  2. Assemble slow cooker:
    • Place sliced peppers, onions, and garlic in the slow cooker.
    • Add beef on top.
    • Pour in soy sauce, beef broth, oyster sauce, and more black pepper.
  3. Cook:
    • Cover and cook low for 6–7 hours or high for 3–4 hours, until beef is tender.
  4. Thicken sauce (optional):
    • Mix cornstarch and water to make a slurry.
    • Stir into slow cooker 15–20 min before serving.
  5. Serve:
    • Serve over steamed rice, quinoa, or noodles.
    • Garnish with chopped green onions or sesame seeds.

  • Spicy pepper steak: Add sliced chili or ½ tsp red pepper flakes.
  • Vegetable-packed: Add mushrooms, snow peas, or carrots.
  • Low-sodium: Use low-sodium soy sauce and broth.

  • Slice beef thinly against the grain for tender bites.
  • Bell peppers taste best if added right at the start; they get soft but not mushy over slow cooking.
