Slow Cooker Pork Chops

Ingredients (Serves 4)

  • 4 bone-in or boneless pork chops (½–1 inch thick)
  • Salt & pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup chicken broth
  • 1 onion, sliced
  • 2–3 cloves garlic, minced
  • Optional: 1 tsp paprika or Italian seasoning
  • Optional thickener: 1–2 tsp cornstarch

Instructions

1. Prep pork chops

  • Season chops with salt, pepper, garlic powder, and onion powder.
  • Optional: sear in a skillet 2 minutes per side for extra flavor (not required).

2. Assemble in slow cooker

  • Place sliced onions and garlic at the bottom of the slow cooker.
  • Add pork chops on top.
  • Pour chicken broth around chops.
  • Sprinkle optional paprika or herbs.

3. Cook

  • Low: 6–7 hours
  • High: 3–4 hours
  • Pork should be tender but not falling apart.

4. Optional gravy

  • Remove chops, keep warm.
  • Mix 1–2 tsp cornstarch with cold water, stir into slow cooker juices.
  • Cook on high 5–10 minutes until thickened.
  • Pour over chops before serving.

Serving Suggestions

  • Mashed potatoes or rice
  • Steamed vegetables
  • Fresh bread to soak up juices

Tips

  • Don’t overcook thinner chops—they dry out easily.
  • Bone-in chops often stay juicier than boneless.
  • Searing adds flavor but is optional if short on time.
