Souvlaki

Here’s a classic, easy way to make souvlaki, the iconic Greek grilled meat skewers:


Greek Souvlaki Recipe

Ingredients

  • 1 lb (450 g) pork, chicken, or lamb, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional: wooden skewers, soaked in water 30 minutes

For serving:

  • Pita bread
  • Tzatziki sauce
  • Sliced tomatoes, onions, and cucumber

Instructions

  1. Marinate the meat:
    • In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
    • Add meat cubes and toss to coat.
    • Cover and refrigerate for at least 30 minutes (up to 4 hours for more flavor).
  2. Prepare the skewers:
    • Thread the meat onto skewers.
  3. Cook the souvlaki:
    Grill method:

    • Preheat grill to medium-high.
    • Grill skewers 8–12 minutes, turning occasionally, until cooked through and slightly charred.

    Oven method:

    • Preheat oven to 425°F (220°C).
    • Place skewers on a baking sheet lined with foil.
    • Bake 12–15 minutes, turning once halfway, until cooked through.
  4. Serve:
    • Serve on pita bread with tzatziki sauce and sliced veggies.
    • Optional: sprinkle with extra oregano or drizzle with lemon juice.

Tips

  • Chicken breast or thighs work well; pork shoulder or tenderloin is great for juiciness.
  • For extra char flavor, finish the skewers under a broiler for 1–2 minutes.
  • You can also make a souvlaki bowl over rice or salad if you prefer.
