Easy Taco Casserole

Serves 6

Ingredients

  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 can black beans or pinto beans, drained & rinsed
  • 1 can corn, drained
  • 1 can Rotel (diced tomatoes & green chiles)
  • 1 cup salsa
  • 2 cups crushed tortilla chips or cooked rice
  • 2 cups shredded Mexican-blend cheese
  • Optional toppings: sour cream, lettuce, tomatoes, olives, jalapeños

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown meat in a skillet; drain grease.
  3. Stir in taco seasoning, beans, corn, Rotel, and salsa. Simmer 5 minutes.
  4. In a greased 9×13 dish, layer:
    • Chips or rice
    • Meat mixture
    • Cheese
      Repeat if needed, ending with cheese.
  5. Bake uncovered 20–25 minutes until hot and bubbly.
  6. Let it rest 5 minutes, then add toppings.

Easy Variations

  • Low-carb: skip chips/rice, add cauliflower rice
  • Creamy: stir in ½ cup sour cream or cream cheese
  • Chicken taco casserole: swap beef for shredded chicken
  • Spicy: add extra jalapeños or hot taco seasoning
